Living in Hampshire, we’re surrounded by wonderful artisan food and drink suppliers but we don’t always get to sample the emerging trends in London. When the capital was awash with pisco sours, we watched on social media, eager to try this national drink of Peru. Finally, we tried our first Pisco Sour during a visit to fabulous Peruvian restaurant, Lima Floral, in 2014. And we were won over instantly. 25ml Lime juice
25ml Sugar syrup
1 egg white
Angostura Bitters to garnish
Combine the pisco, lime juice, sugar syrup and egg white in a shaker. Do not add ice.
(we add the spring from our hawthorn strainer to the shaker to help the froth).
Add ice and shake again.
Strain into a chilled glass.
Add a few drops of bitters to garnish.
